Where do I need to look in order to widen the category as my labels are longer than the cells allow.

You'll want to increase the overall board width:
twidth=.95 // Width as fraction of screen (0.0-1)

how do I change the height of the table. that does increase the space for the catergory row. but it widens the table past the screen

catheight=.15 // height of the row showing categories (usually smaller)
